BANANA BREAD, MEATBALLS, FRUIT N SEEDS – OH MY!

HEALTHY BANANA BREAD

Banana bread is such an easy, grab and go breakfast choice… but the amount of sugar, flour and butter (or oil) found in most banana bread recipes puts them unfortunately in the junk food category.

Our healthy banana bread out-healths traditional banana bread recipes in a few ways:

1-Toasted Oatmeal Flour is what we use to replace bleached white flour. Oat flour is gluten-free and made from whole oats that have been ground into a powder. Oat flour gives baked goods more flavor than regular all-purpose flour, though it also gives them a chewier texture.

2-Bananas are actually a huge secret to keep the muffins moist without oil or butter and sweet.

3-Honey (only a teeny bit) is used to sweeten the recipe (vs refined white sugar) and sometimes we use absolutely no sweetener at all. It simply depends on the ripeness of the bananas.

Don’t be alarmed about the taste! Toasting and grinding the oats results in a smooth bread with a slightly nutty flavor while the sweetness will still tempt the pickiest eaters.

Pesto Chicken Veggie Meatballs

Thse tiny bites are so loved. Maybe because they are convenient. Maybe because they’re delicious. Maybe it’s because we know children are 98.1% more likely to eat something that’s tiny-sized and if that tiny-sized is packed with protein and veggies… WE ARE… W I N N I N G.

This is one of those lovely strategies we use to help little one’s discover new palates and it that is usually pretty darn successful.

You can certainly serve these atop pasta for the kiddos (or gluten-free pasta for yourself) and smothered in your favorite sauce (Alfredo, marinara, pesto–it all works). We love to serve them with toothpicks and a dollop of a delicious marinara or pesto on the side. Try them served with your favorite roasted veggies, or on zoodles or on in a salad — IT’S ENDLESS DELICIOUSNESS.

SLIMMING SNACK

Next up for the week of meal preppin’ is our favorite mix of in-season fruits served with chia seeds, flax seeds, pumpkin seeds, organic-gluten-free-granola, nuts and even a drizzle of honey to blast that sugar craving away.
